you can use custom field with wpdm pro. create custom field in regular way and add [custom field name] tag in link/page template to show the value.
I just check default value’s settings page and got it working. to delete package info you need to edit wpdm-add-new-file-front.php. To allow only one role to upload from front-end, you can set it from download manager settings front-end settings.
