It is happening due to wrong stripe configuration, you are using stripe publishable key as secret key. Please use correct key at stripe secret key field.
Please give me temporary wp-admin login info in a private reply to check your issue.

It looks like cf7 changed their response feedback handling functions. Now, due to their innerText property call in js, the chrome showing the html in encoded text.
However, in this case, we recommend you using our live form plugin, which will work great in this case, also has many other awesome features.
