Interesting… I have the notifications as undelivered mail returned to sender in my Spam folder, including the one you sent. Any thoughts?

I have checked that box and still am not getting any email notification. I am not convinced you tested this exactly as I intend to use it. Please update this document and have a notification sent to my email address, jessesimmers@gmail.com

Can you confirm that you got an email notification that a document was updated when you tested?

Here I just added an icon for testing. There is one before the archive that I dropped into the page before the archive shortcode to show it works on this page. Then the same exact icon/code is used in the template.
