How do i show documents sorted by category?

Hello,
I am trying to show documents inside a product as this demonstrative picture : https://imgur.com/psG1yW0

At the same time, i am using the plugin version where i specify where the document is shown from the document plugin page as this picture shows :

How can I achieve this even if it includes editing the plugin code?

What I am trying to achieve is not possible with these short codes because of these conditions :

-Trying to show only certain documents on certain products.
-Trying to show certain documents of those displayed on a certain product for only certain users.
-Trying to sort all of the documents by category as shown in the picture above.

Here is an example :

Let’s say we have 3 products : P1 P2 P3
Let’s say we have 9 documents and 3 categories to show : Cat1(D1 D2 D3) Cat2(D4 D5 D6) Cat3(D7 D8 D9)
Let’s say we have 2 user roles : logged in users and non logged in users(https://imgur.com/3umuOvL)
Let’s say P1 has D1 D2 D3 D4 D9(like the image above) although D1 D2 can only be seen by logged in users, and I want to display those documents as follow :

Cat1
D1 D2 D3

Cat2
D4

Cat3
D9
